Since I’m dieting, I’ve been looking for something that would kill my chocolate craving that always comes up around 7pm, but that wouldn’t go overboard in starches or sugar. So I thought…what if I come up with a chocolate chia seed cookie? Here’s what I came up with:
Ingredients:
1 1/2 cups semi-sweet or bittersweet chocolate chips
3 large egg whites
1 cup powdered sugar
1/2 cup unsweetened cocoa powder
1 tablespoon chia seeds
1/4 teaspoon salt
Directions:
1) Preheat oven to 350 degrees. Prepare a cookie sheet.
2) Melt 1 cup of chocolate chips in the microwave for about 2 minutes, stirring twice.
3) Beat egg whites in a large bowl until soft peaks form. Gradually beat in 1/2 cup sugar.
4) Mix together remaining ingredients, except for the melted chocolate and chocolate chips. On low speed, beat these into the meringue. Add the chocolate and chocolate chips.
5) Put a bit of powdered sugar into a bowl, rolling each of the cookies in it and placing them on your cookie sheet.
6) Bake until the tops crack, about 10 minutes.
Each cookie only has about 50 calories of pure chocolate and chia seed deliciousness, so enjoy!

Ingredients:
- 4 large hard-boiled eggs, chopped
- 4 hard boiled egg whites, chopped (discard the rest)
- 1 medium hass avocado, cut into 1/2-inch pieces
- 1 tbsp light mayonnaise
- 1 tbsp fat free plain yogurt
- 1/2 tablespoon finely chopped chives
- 2 teaspoons red wine vinegar
- 1/2 tsp Kosher salt
- pinch freshly ground pepper
Directions:
Combine the egg yolks with the avocado, light mayo, yogurt, chives, vinegar, salt and pepper. Mash with a fork. Combine with egg whites and adjust salt as needed.How did I never think of this!? Avocado instead of Mayo… uh DUH
